Corral Boss/ Head Wrangler — Permanent: Year-Round

Corral Boss/Head wrangler  wanted for year around Guest Ranch and Riding stable. We are looking for a person with extensive experience  with horses and people in the Guest Ranch and Riding Stables business. The Corral Boss is directly responsible for supervising and running all aspects of the horse corral operations.  He is the lead man in the corral is responsible for supervising the crew and making sure all their duties are carried out as directed.The Corral Boss is responsible for the care of the livestock including doctoring, feeding schedule, shoeing schedule saddling and tacking, maintaining tack, and maintaining the equipment, machines, and the buildings. One of the most important duties is evaluating the guest and sizing up the horse and rider and picking horses for the guest.The ability to train and ride colts in preparation for the string is also important.The Corral Boss must have the ability to lead, motivate, and supervize the crew to make sure they are accountable for performing their duties as expected.  Great people skills are a must as our business is all about giving our guest a great experience.

The Baker is expected to make, under the direction of the Head Chef:  breads, salads, lunches for guest picnic lunches, desserts, breakfast pastries and candies for up to 50 guests per day.  The Baker will assist during dinner hours with preparation of salads and desserts.

Working under the direction of the Lodge and Floor Manager/Shift Supervisor, and in cooperation with the Chef and kitchen staff, the wait staff presents the Chef's menus, takes orders and serves the morning and evening meals to guests, performing all related tasks.  Attentive and gracious service to guests, careful performance of daily side work, and adherence to standards and practices for safety and sanitation in the kitchen and wait alley areas are essential elements of the IRMR wait staff job.  Duties of the AM Wait Assist are considered shared duties, and assumed exclusively by wait staff when the Assist is not present.

Job Description
The AM Line Cook's main job is to prep and cook breakfast for up to 50 guests and 30 employees 5 mornings a week.  They will work with the Chef to design daily breakfast specials, prep for dinner after breakfast service and perform all tasks necessary for the kitchen's proper daytime functioning.  Other AM Line Cook duties include:  assisting with guest sandwiches when busy, maintaining a clean line throughout service, doing breakfast dishes and assisting with the upkeep of the staff kitchen area.  The AM Line Cook also is expected to fill in for other positions wherever needed throughout the summer. 

Job Requirements

Dishwasher/Kitchen Assistant — Seasonal: Jun 05, 2016 - Sep 14, 2016

Job Description
Primary job is to keep the dish pit free and clear of all dishes during their shift as well as put all dishes/pots/pans/utensils away properly.  They will also need to clean and close the dish pit at the end of the shift and help the cooks as needed.  Various other tasks may be assigned during the day/night as needed depending on the needs of the kitchen.  These may include:  assisting with prepping food, putting orders away, organizing/cleaning the kitchen and upkeep of staff kitchen area and helping out where needed.

Job Description
Working under the direction of the Lodge and Floor Manager/Shift Supervisor, the person is responsible for the children's program will plan activities, crafts and games appropriate for the participating children's ages and the available Ranch facilities, safely entertaining and playing with the children during the evening dinner hour 3 nights per week. Most children participating are 6 - 12 years of age; there are occasions when younger children join the program.  These shifts would be combined with another position such as housekeeper, wait staff or guest services host.

Fulfill the duties of the Head Chef when necessary.  Positive, effective performance of managerial tasks and producing/cooking high quality food on a daily basis are crucial functions.  The Sous Chef also needs to have the skill set and willingness to fill in wherever needed in the daily operations of the kitchen, including cooking breakfast, lunch, dinner, doing dishes, putting orders away and maintaining standards of cleanliness and organization.  Everyone in the kitchen will help out at some point with the IRMR employee food program and dishes.

Job Description

The PM Line Cook's main job at the IRMR is to help the Executive and Sous Chef organize, prep and produce high quality dinners for each week's multi-coursed meals in the lodge dining room and 4 weekly outdoor dinner events: BBQs, Dutch oven and wood-fired oven dishes.  Other duties may include: baking, AM breakfast line cook and preparing lunches. In addition, the PM Line Cook is expected to fill in for other positions wherever needed throughout the summer.  Everyone in the kitchen will help out at some point with the IRMR employee food program and dishes.

Job Description

Prepare gourmet sandwiches and salads for the ranch guests and help out with AM dishes, fill the baking shift on the baker's days off and cook breakfast for the AM line cook on their days off.  This position also will be asked to help with garde manger/desserts and salads on fine dining night.  Some of the daily duties will include:  prepping for and producing sandwiches and salads, keeping a clean station throughout service, breaking down the station and re-prepping for the next day, doing the breakfast dishes and maintaining the staff kitchen area.  The person filling this position is expected to help out wherever needed and perform any tasks as directed by the Head or Sous Chefs.  Everyone in the kitchen will help out at some point with the IRMR employee food program and dishes.

The historic Idaho Rocky Mountain Ranch is nestled amidst snowcapped Sawtooth and White Cloud Mountain peaks and the meandering Salmon River in one of the country’s most spectacularly scenic, adventure rich and relatively undiscovered regions of the country.  The Ranch is distinguished by its quality, simplicity, hospitality, and relaxed ambiance.  Artful renovation of accommodations, enhancement of the activity program and thoughtful design of the food program have preserved for our guests the authenticity of a western ranch experience consistent with their high expectations and the  magnificent natural surroundings.

IRMR seeks an executive chef with knowledge of advanced culinary product and technique and the personal attributes and abilities necessary to hire, train, supervise, lead by example and work alongside a seasonal kitchen crew to design and execute a quality food program as an integrated part of the total Idaho Rocky Mountain Ranch guest experience.  Using locally sourced, organic, sustainable product whenever possible and the highest quality products that allow the ingredients to speak for themselves, the Executive Chef is responsible for designing menu and providing our 50 guests breakfast, packed to-go lunch, snacks and dinner meals that include coursed dinners in the lodge dining room and outdoor events  --  bbq, dutch oven and wood fired brick oven meals.   Additionally, the Executive Chef provides meals for a limited number of guests who visit the Ranch for dinner by reservation and for several private events during the guest season, and prepares healthy food for our 30 crew members who both live and work on the Ranch.  The Executive Chef works as one of the Ranch management team, reporting to the lodge manager, to maintain the compatibility and integration of the food program with the total Ranch guest experience.

The seasonal nature of our Ranch business, coupled with our high quality program standards, provides a challenge to the Executive Chef outside the usual challenges of this position in a restaurant: Menu design must allow for production of excellent food for our guests by the Chef with a seasonal crew.  Hiring, training, providing ongoing supervision and season-long instruction and leadership to the seasonal crew, while working and cooking alongside them, are necessary to accomplish the goal.

Red Horse Mountain Ranch, an adventure vacation destination in Harrison, Idaho, is seeking a chef seasonal position. The chef has a critical role in taking care of guests and staff. This position is available from May through early October 2016. The chef will be responsible for the following tasks: helping to plan meals for guests and staff; helping to prep all foods for meals, maintaining proper food levels, proper storage of food stock, maintaining a clean kitchen, maintaining and following the to do list, and, filling-in as needed.
